Banana Nut Bread

Leftover bananas? Turn’em into a tasty treat!

Banana Nut Bread


1 c. Butter

2 c. Sugar

2 tsp. Vanilla

2 tsp. Lemon Juice

4 eggs

2 c. Mashed Bananas

3 1/2 c. Flour

1 tsp. Salt

2 tsp. Baking Soda

2 tsp. Baking Powder

1 c. Sour Cream

1 c. Chopped Nuts

____________________________________________________________________________________________1- Cream butter (softened) and sugar together.

2- Add vanilla and lemon juice.

3- Add eggs one at a time, beating well after each addition.

4- Add bananas.

5- Sift flour, salt, soda, and baking powder in a separate bowl.

6- Add flour mixture alternatively with sour cream to banana mixture.

7- Fold in nuts.

8- Pour into 2 greased and floured loaf pans.

9- Bake at 350 degrees for 50-55 minutes, until toothpick inserted in center comes out clean.

10- Let cool for 10 minutes, then turn out of pans to cool completely.


I bought a big bunch of bananas and then didn’t pack lunch all week, so long story short…I had several bananas (slightly past their prime) leftover this weekend. Instead of throwing them out…voila! I turned them into banana nut bread. Since I decided to cook last minute, I didn’t have pecans or sour cream. However I did a quick inventory and came up with some substitutes. I used 6 oz. of cream cheese and a teaspoon of milk as a substitute for sour cream. And used chopped almonds instead of pecans in one of the loaves of bread.
